This recipe for beetroot will guide you to cook and bottle your own beetroot. Use sterilized bottles and if you put the cap on while the contents are still hot, it will cause a vacuum seal, enabling you to store it for quite a long time. Once you open the bottle to serve the beetroot, slice in some fresh onion with it.
- 1 kg beetroot
- 2 cups sugar
- 1 tbsp salt
- 1/4 tsp fine white pepper
- 700 ml white vinegar
- 500 ml water
- Boil beetroot in water until soft - the fresher, the shorter the boiling time.
- Peel and grate or slice.
- Boil the rest of the ingredients together for 5 minutes.
- Pour over beetroot and spoon into three large bottles. Cap.
