  • 1 kg beetroot
  • 2 cups sugar
  • 1 tbsp salt
  • 1/4 tsp fine white pepper
  • 700 ml white vinegar
  • 500 ml water


  • Boil beetroot in water until soft - the fresher, the shorter the boiling time.
  • Peel and grate or slice.
  • Boil the rest of the ingredients together for 5 minutes.
  • Pour over beetroot and spoon into three large bottles. Cap.
