This easy muffin recipe shows you how to make basic muffins. You may play around with this as the basic recipe by adding blueberries, a mashed banana, nuts or poppy seed, and lemon essence. You may also top them with fresh berries or other fruit. If you so wish, you may even omit the sugar and add something savory such as biltong powder or cheese.

Ingredients
- 2 cups flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tbsp sugar
- 1 egg beaten
- 1 cup milk
- ¼ cup butter melted
Instructions
- Mix the dry ingredients.
- Add egg, milk, butter, and stir without smoothing the batter completely.
- Spoon into greased muffin pans, filling each only 2/3 full.
- Bake for 20 to 25 Minutes at 190°C (320°F).
