This is a recipe for a delicious chickpea and chicken curry. Very tasty as a main dish served with Naan bread and a green or cucumber salad. This curry may also be served on roti or on a bed of Basmati rice.

Ingredients
 
 

  • 1 onion finely chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 3 tbsp curry paste
  • 3 chicken breast diced
  • 400 grams tomatoes chopped
  • 400 grams chickpeas drained
  • ½ cup chicken stock
  • ½ cup yogurt
  • coriander for serving
  • naan bread for serving

Instructions
 

  • Using a saucepan add the onions and oil and sauté until soft.
  • Add the tomato paste and curry paste, cook for 2 minutes.
  • Add the chicken breasts and close the saucepan.
  • Add the chopped tomatoes, chickpeas and chicken stock simmer for 15 to 20 minutes or until cooked through.
  • Once cooked add the yogurt giving it a good stir and heat through.
  • Serve with naan bread topping it with coriander.
