This is a recipe for a delicious chickpea and chicken curry. Very tasty as a main dish served with Naan bread and a green or cucumber salad. This curry may also be served on roti or on a bed of Basmati rice.

Ingredients
- 1 onion finely chopped
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 3 tbsp curry paste
- 3 chicken breast diced
- 400 grams tomatoes chopped
- 400 grams chickpeas drained
- ½ cup chicken stock
- ½ cup yogurt
- coriander for serving
- naan bread for serving
Instructions
- Using a saucepan add the onions and oil and sauté until soft.
- Add the tomato paste and curry paste, cook for 2 minutes.
- Add the chicken breasts and close the saucepan.
- Add the chopped tomatoes, chickpeas and chicken stock simmer for 15 to 20 minutes or until cooked through.
- Once cooked add the yogurt giving it a good stir and heat through.
- Serve with naan bread topping it with coriander.
