For the crust 1 cup butter softened cooking spray ½ cup granulated sugar 2 ½ cup flour ½ tsp salt For the Filling 2 blocks cream cheese softened ½ cup granulated sugar 1 large egg ¼ cup sour cream 1 tsp vanilla extract 1 juice of lemon 3 cup blueberries For the Crumb Topping ½ cup butter melted ⅓ cup granulated sugar 1 cup flour 1 zest of lemon
Crust Preheat your oven to 180ºC (350ºF), greasing a pan with cooking spray.
In a large mixing bowl using a hand mixer beat the butter and sugar together until light and fluffy.
Add the flour and salt, mix until well combined.
Press into the prepared pan, and bake until lightly golden, about 20 minutes.
Let it cool down while making your filling and crumb topping.
Filling In another large bowl, beat the cream cheese and sugar together until there are no lumps.
Add the egg and beat until well combined, then beat in the sour cream, vanilla, and lemon juice.
Fold in your blueberries.
Crumb Topping In a small mixing bowl, mix together melted butter, sugar, flour, and lemon zest until mixture resembles wet sand.
Pour the filling into cooled crust, then top it with an even layer of crumb topping.
Bake until topping is golden ad center is just set, about 40 minutes.
Let it cool for 20 minutes and room temperature, then refrigerate until completely chilled for 2 hours.
