Ingredients
 
 

For the crust

  • 1 cup butter softened
  • cooking spray
  • ½ cup granulated sugar
  • 2 ½ cup flour
  • ½ tsp salt

For the Filling

  • 2 blocks cream cheese softened
  • ½ cup granulated sugar
  • 1 large egg
  • ¼ cup sour cream
  • 1 tsp vanilla extract
  • 1 juice of lemon
  • 3 cup blueberries

For the Crumb Topping

  • ½ cup butter melted
  • cup granulated sugar
  • 1 cup flour
  • 1 zest of lemon

Instructions
 

Crust

  • Preheat your oven to 180ºC (350ºF), greasing a pan with cooking spray.
  • In a large mixing bowl using a hand mixer beat the butter and sugar together until light and fluffy.
  • Add the flour and salt, mix until well combined.
  • Press into the prepared pan, and bake until lightly golden, about 20 minutes.
  • Let it cool down while making your filling and crumb topping.

Filling

  • In another large bowl, beat the cream cheese and sugar together until there are no lumps.
  • Add the egg and beat until well combined, then beat in the sour cream, vanilla, and lemon juice.
  • Fold in your blueberries.

Crumb Topping

  • In a small mixing bowl, mix together melted butter, sugar, flour, and lemon zest until mixture resembles wet sand.
  • Pour the filling into cooled crust, then top it with an even layer of crumb topping.
  • Bake until topping is golden ad center is just set, about 40 minutes.
  • Let it cool for 20 minutes and room temperature, then refrigerate until completely chilled for 2 hours.
