  • cups flour
  • tsp baking powder
  • 2 eggs
  • ¼ tsp salt
  • 1 cup sugar
  • 200 g butter melted
  • ½ cup milk
  • 1 tsp vanilla essence
  • 12 - 20 paper cupcake cups

Vanilla icing

  • 125 grams butter soft at room temperature
  • 3 cup icing sugar
  • 1 tsp vanilla


  • Preheat oven to 170°C/350°F.
  • Mix together butter and sugar.
  • Add eggs.
  • Sift together dry ingredients and work into the butter mixture.
  • Use a blender to mix dry ingredients into butter mixture, alternating with milk.
  • Add vanilla and spoon into cupcake paper cups, only ⅔ full.
  • Bake for 15 - 20 minutes.
  • Cool down completely before decorating.

Vanilla icing

  • Mix together the soft butter with icing sugar using a large spoon.
  • When lump free and smooth, add vanilla.
  • Spread over cupcakes and sprinkle with colourful sprinkles or a glazed cherry.
