Ingredients
  

  • 1 egg white
  • 1 roll puff pastry
  • 12 tsp fine apricot jam
  • 2 tbsp castor sugar
  • ½ tsp baking powder
  • ½ cup dessicated coconut
  • cooking spray for muffin pan

Instructions
 

  • Roll out puff pastry and cut into rounds
  • Preheat oven to 200℃(450℉)
  • Spray muffin pan and line with circles of puff pastry
  • Beat egg whites stiffly and add sugar gradually
  • Fold in coconut and baking powder
  • Put 1 tsp of jam on each circle
  • Add 1 tsp of coconut mix over jam
  • Bake for 10 - 15 minutes from the bottom (top element may burn the tartlets)
