
Tapioca Pudding
Tapioca granules are larger than sago but taste more or less the same. Prepare this lovely pudding and serve with custard or cream.

Ingredients
- 250 g tapioca pearls
- 4 cups full-cream milk
- ½ tsp salt
- 70 g butter
- 120 g sugar
- 5 ml vanilla
- 4 large eggs
- 2 tbsp apricot jam
Instructions
- Pour cold water over tapioca to cover.
- Soak for an hour.
- Preheat oven to 160°C.
- Drain tapioca in a colander and add to a saucepan.
- Add milk and heat slowly.
- Stir continually until tapioca turns glassy or transparent.
- Add extra milk if the mixture becomes dry.
- Mix in beaten eggs, salt, sugar and vanilla.
- Bake for 1 hour.
