Tapioca Pudding

Tapioca granules are larger than sago but taste more or less the same. Prepare this lovely pudding and serve with custard or cream.

  • 250 g tapioca pearls
  • 4 cups full-cream milk
  • ½ tsp salt
  • 70 g butter
  • 120 g sugar
  • 5 ml vanilla
  • 4 large eggs
  • 2 tbsp apricot jam


  • Pour cold water over tapioca to cover.
  • Soak for an hour.
  • Preheat oven to 160°C.
  • Drain tapioca in a colander and add to a saucepan.
  • Add milk and heat slowly.
  • Stir continually until tapioca turns glassy or transparent.
  • Add extra milk if the mixture becomes dry.
  • Mix in beaten eggs, salt, sugar and vanilla.
  • Bake for 1 hour.
