It is lovely to use vegetables from your own garden. Sometimes your baby marrows (zucchini) are fully grown before you could harvest them. This recipe is a very nice way to use you large marrows.

Ingredients
- 3 cups zucchini (marrow) raw, grated
- ½ cup flour
- 3 eggs
- 1 tsp baking powder
- ½ cup sugar
- 1 tsp butter
- ⅛ tsp salt
- 1 tsp vanilla
- ⅛ tsp cinnamon
Instructions
- Preheat oven to 180°C/350°F.
- Grease a small oven pan.
- Mix together butter, sugar and eggs.
- Add salt, flour and baking powder, then cinnamon and vanilla.
- Lastly stir in grated marrow and pour into pan.
- Bake for 35 - 40 minutes.
