This recipe for stuffed peppers makes it so easy to make your own stuffed peppers. It offers three different stuffings. It makes for an unusual, colorful side dish. It also makes an ideal light meal for vegetarian eaters. You may, of course, substitute the green pepper with yellow or red peppers.

Ingredients
 
 

Filling 1

  • 6 medium green peppers tops cut off and seeded
  • 250 ml pitted black olives coarsely chopped
  • 500 ml breadcrumbs white or wholewheat
  • 1 small onion finely chopped
  • 250 ml cheddar cheese grated
  • 1 egg
  • 250 ml milk
  • butter or margarine

Filling 2

  • 2 medium onions finely chopped
  • 2 cloves garlic finely chopped
  • 120 grams fresh brown breadcrumbs
  • 170 grams canned sweetcorn
  • 25 ml butter or margarine
  • 2 ml paprika
  • 2 ml black pepper
  • 5 ml salt

Filling 3

  • 250 ml cooked brown rice
  • 1 small onion minced
  • 25 ml parsley finely chopped
  • 1 ml dried thyme
  • 1 ml dried sage
  • 50 ml olive oil
  • 500 ml tomato purée

Instructions
 

Filling 1

  • Combine the filling ingredients, except the butter or margarine, and stuff the green peppers with the mixture.
  • Place the green peppers in a greased casserole and dot each with a little butter or margarine.
  • Bake in the oven at 180ºC for 45 minutes and serve hot.

Filling 2

  • Melt the butter or margarine in a frying-pan and sauté the onions and garlic in it for 5 minutes.
  • Add the mushrooms and sauté for a further 3 minutes, stirring occasionally.
  • Stir in the breadcrumbs, sweetcorn, apple, salt, pepper and paprika and sauté for 1 minute.
  • Stuff the green peppers with the mixture, and place in a greased casserole.
  • Dot each with butter or margarine.
  • Bake in the oven at 180ºC for 45 minutes and serve hot.

Filling 3

  • Sauté the onion in a little of the olive oil, then combine with all the ingredients except the remaining olive oil and the tomato purée.
  • Stuff the peppers with this mixture and place them in a greased casserole.
  • Combine the remaining olive oil and the tomato purée and pour over the green peppers.
  • Bake in the oven at 180ºC for 45 minutes and serve hot.
