Ingredients
 
 

  • 1 fresh turkey 10 to 12 pounds
  • ¼ lb butter
  • 1 lemon juiced and zested
  • 1 tsp fresh thyme chopped
  • 1 bunch fresh thyme
  • salt to taste
  • pepper to taste
  • 1 lemon halved
  • 1 onion quartered
  • 1 head garlic halved

Instructions
 

  • Preheat oven to 180ºC (350°F).
  • Melt butter and add chopped thyme, lemon juice and zest.
  • Wash and trim the turkey by removing excess fat and feathers.
  • Salt and pepper the inside of the turkey.
  • Stuff it with the bunch of thyme, lemon, onion and garlic.
  • Brush the outside with the butter mix.
  • Sprinkle with salt and pepper.
  • Roast for 2½ to 3 hours.
