Ingredients
  

  • 4 eggs
  • 40 ml water
  • pinch of salt

Fiiling

  • 100 ml cooked brown beans
  • 10 ml vegetable oil
  • 1 onion chopped
  • 50 g mushrooms chopped
  • 30 g baby spinach chopped
  • ¼ tsp rosemary
  • ½ tsp parsley
  • salt and pepper to taste
  • ¼ cup feta or cheddar cheese crumbed or grated

Instructions
 

  • Fry the onions and mushrooms in oil until cooked
  • Add beans and spices
  • Bake 2 omelettes with the egg, water and salt mix, using 5ml oil
  • Cook omelette until done on one side, flip
  • Add filling on one half, top with spinach and fold over
  • Top with cheese and serve on toast
