  • 3 cups cubed potatoes peeled
  • ¼ cup onion chopped
  • ¼ tsp salt
  • 1 can chicken broth
  • 1 small bunch parsley chopped
  • 2 tbsp cornflour
  • 1½ - 2 cups milk


  • Combine potatoes, onion, salt, and broth in a medium size casserole. Add the parsley.
  • Cook, covered for 12 - 13 minutes, or until potatoes are tender.
  • Combine cornflour with a small amount of cold milk. Stir into potato mixture. Add the remaining milk.
  • Cook for another 6 - 7 minutes, or until the mixture comes to a boil and is piping hot.
  • Stir once or twice during the cooking.
