Ingredients
For the cupcakes
- 1 box white cake mix plus the ingredients on the box
- 20 strawberries trimmed
For the frosting
- 1 cup butter softened
- 3 ½ cup icing sugar divided
- ¼ cup lemonade or freshly squeezed lemon juice
- 4 drops red food coloring
- lemon slices for garnish
- strawberry slices for garnish
Instructions
- Preheat your oven to 180ºC (350ºF) and line 2 muffin pans with 20 cupcake liners.
- In a large mixing bowl, prepare the cake batter according to the package directions.
- Pour the batter into prepared cupcake liners.
- Place a strawberry into each cupcake liner.
- Bake until golden, about 20 minutes.
- Let them cool down completely.
- Make lemonade frosting, in a large mixing bowl use your hand mixer and beat together the butter and half of the icing sugar until you have a smooth texture.
- Beat in the lemonade and the rest of the icing sugar until light and fluffy.
- Stir in enough red food coloring to make it pink. (4 drops worked well for us)
- Using a star tip pipe the cooled cupcakes with lemonade frosting.
- Garnish with a lemon slice, a strawberry slice and decorate straw.
