Ingredients
 
 

  • 2 red onions chopped
  • 9 garlic cloves chopped
  • 1 cup African bird's eye chillies without stems
  • 2 red bell peppers chopped
  • 3 ripe tomatoes skin removed, chopped
  • 4 tbsp olive oil
  • cup red wine vinegar
  • 2 tbsp brown sugar
  • zest and juice of 3 lemons
  • 1 tbsp salt
  • 1 tsp coursely grated black pepper
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 2 bay leaves

Instructions
 

  • Mix all ingredients together in a food processor and chop finely.
  • Simmer for 20 minutes while stirring occasionally.
  • Put in jars. Can be refrigerated for up to 2 weeks.
