Pap en Sous (Gravy) Recipe

Ingredients
 
 

  • 1 cup maize meal
  • 2 cups water
  • 2 tbsp butter
  • ½ tsp salt

For the sous (gravy)

  • 1 onion chopped
  • 1 tbsp vegetable oil
  • 2 tomatoes chopped
  • ¼ green pepper chopped
  • ½ tsp sugar
  • ½ tsp curry powder
  • salt and pepper to taste
  • ½ cup water

Instructions
 

  • Bring the water to a boil in the kettle and pour into a microwave safe bowl.
  • Add salt and maize flour. Stir gently with a fork until smooth.
  • Microwave on 100% for 3 minutes. Remove using mittens and stir gently.
  • Cook for another 3 minutes.

For the sous (gravy)

  • Fry the onion in heated oil for 2 minutes.
  • Add curry and fry for another 3 minutes.
  • Add green pepper and tomatoes. Add water.
  • Add salt and pepper to taste and sugar.
  • Cook for about 10 minutes until tomatoes and peppers are soft and done and the sauce is starting to thicken slightly.
