Ingredients
  

  • 6 eggs
  • 2 onions chopped
  • 2 tsp crushed garlic
  • 2 bell peppers, one yellow, one red chopped
  • 1 cup baby tomatoes halved
  • 1 can tomato and chilli relish
  • 500 g cooked red kidney beans
  • 20 ml vegetable oil
  • 2 tsp cumin (jeera)
  • 2 tsp origanum
  • 1 tsp paprika
  • salt and pepper to taste
  • 1 cup cheddar cheese grated
  • ¼ cup parsley fresh, chopped

Instructions
 

  • Fry the onions and garlic in a pan with the oil
  • Add peppers and spices
  • Add tomatoes and simmer for 10 minutes
  • Add relish and beans and allow to simmer for another 5 minutes
  • Create spaces in the mix and break eggs into them
  • Cook to your liking and sprinkle cheese over
  • Garnish with fresh parsley
  • Serve with toast
