Use sponge cake and make your own sauce to dip your lamingtons.

Ingredients
 
 

  • 4 cups icing sugar sifted
  • cup cocoa sifted
  • 2 tbsp butter melted
  • ½ cup warm milk
  • 1 pound unsweetened, dry coconut
  • 1 sponge cake cut into large squares

Instructions
 

  • Cut a bought or baked sponge cake into large squares - 1½ x 1½ inches.
  • Mix icing sugar and cocoa with butter and milk.
  • Use a fork and dip each sponge cake square into the syrup on all sides. It should not soak right through but should be moist all over.
  • Roll in the coconut.
