A lamb shank is one of the finest cuts of meat. Use this recipe to prepare it to be served with rice or mashed potatoes with vegetables for a very special Sunday lunch or dinner.

Ingredients
- 4 lamb shanks
- 3 cloves garlic minced
- 2 tbsp butter
- salt and pepper to taste
- 2 tbsp olive oil extra-virgin
- 1 onion chopped
- 2 medium carrots peeled and chopped
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 410g can chopped tomatoes
- 2 sprigs rosemary
Instructions
- Preheat oven to 350°F.
- Season shanks with salt and pepper.
- Heat oil in a pot and fry shanks on all sides until golden.
- Add butter to the pot with carrots and onions.
- Add garlic and fry until onions are soft.
- Add tomato paste and stir until vegetables are coated.
- Pour in broth and canned tomatoes and return shanks to the pot.
- Add rosemary and bring to a boil.
- Transfer to oven and bake until tender for about 2 hours. Remove rosemary.
- Place shanks on baking tray and grill at high heat for about 3 - 5 minutes until brown on top.
- Place back into pot with gravy. Serve.
