Ingredients
 
 

  • 4 lamb shanks
  • 3 cloves garlic minced
  • 2 tbsp butter
  • salt and pepper to taste
  • 2 tbsp olive oil extra-virgin
  • 1 onion chopped
  • 2 medium carrots peeled and chopped
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 410g can chopped tomatoes
  • 2 sprigs rosemary

Instructions
 

  • Preheat oven to 350°F.
  • Season shanks with salt and pepper.
  • Heat oil in a pot and fry shanks on all sides until golden.
  • Add butter to the pot with carrots and onions.
  • Add garlic and fry until onions are soft.
  • Add tomato paste and stir until vegetables are coated.
  • Pour in broth and canned tomatoes and return shanks to the pot.
  • Add rosemary and bring to a boil.
  • Transfer to oven and bake until tender for about 2 hours. Remove rosemary.
  • Place shanks on baking tray and grill at high heat for about 3 - 5 minutes until brown on top.
  • Place back into pot with gravy. Serve.
