Lamb rib is a very fatty cut, but satisfying and when cooked to perfection, delicious.

Lamb Ribs Recipe

- 1 kg lamb ribs, separated
- 2 tbsp vinegar
- 2 tbsp brown sugar
- 2 tbsp honey
- 4 tbsp soy sauce
- 1½ tbsp chilli paste
- 2 garlic cloves crushed
- salt to taste
Instructions
- Preheat oven to 170°C/350°F and line a baking sheet with baking paper.
- Mix all the glaze ingredients.
- Place the ribs on the baking sheet and spread half the glaze over the ribs.
- Bake for 25 minutes, then brush with some glaze and bake for another 10 minutes.
- Glaze again and bake for 10 more minutes.
- Increase heat to 220°C/430°F and grill until caramelised. Watch carefully so that they don't burn.
