A lamb casserole doesn’t require much attention. Just fry the onions and meat and stick them into the oven. Or, if you prefer, put it in your slow cooker and cook for 8 hours on slow while you are at work. Serve on a bed of rice.

Ingredients
 
 

  • 800 grams lamb stew meat cubes or lamb chops
  • 1 onion chopped
  • 1 tbsp vegetable oil
  • 2 garlic cloves crushed
  • 4 carrots chunks
  • 3 potatoes chunks
  • 1 packet Maggi or Knorr stew mix
  • salt and pepper to taste remember the stew mix contains salt
  • 500 ml chicken or beef stock
  • ½ tsp dried rosemary
  • 2 bay leaves

Instructions
 

  • Fry onions and garlic in the oil for a few minutes.
  • Add meat and fry until brown.
  • Add all ingredients into a casserole dish.
  • Ovenbake for 2 hours at 160°C/340°F.
