Ingredients
- 1 kg stewing lamb
- 4 g fresh coriander leaves
- 4 g whole cumin
- 3 g cinnamon sticks
- 30 ml vegetable oil
- 4 g turmeric
- 1 g black pepper coarse
- 1 tsp salt
- 1 large onion diced
- 4 g fennel seeds
- 6 green cardamoms
- 4 cloves
- 1 bay leaf
- 2 curry leaves
- 3 tsp chilli powder
- 1 tsp ginger crushed
- 1 tsp garlic crushed
- 1 tbsp white vinegar
- 1 tsp masala
- 2 tsp sugar
- 2 tomatoes blended
- 7 small potatoes
- 4 bread halves, hollowed out
Instructions
- Heat oil and add cinnamon, cardamom, cloves, bay leaf and fennel. Stir.
- Add curry leaves, chilli powder, onion, turmeric, ginger and garlic.
- Fry for 3 minutes, then add masala and spices.
- Add sugar and vinegar.
- Add meat and salt. Mix until meat is coated.
- Cover pot and cook for a few minutes.
- Stir until meat is braised.
- Add enough water to make sauce. Bring to a boil.
- Cook for about 1 hour, then add potatoes. Cook for another hour.
- When potatoes are almost done, add tomatoes.
- Add fresh coriander leaves.
- Dish up into half loaves.
