Ingredients
 
 

  • 1 kg stewing lamb
  • 4 g fresh coriander leaves
  • 4 g whole cumin
  • 3 g cinnamon sticks
  • 30 ml vegetable oil
  • 4 g turmeric
  • 1 g black pepper coarse
  • 1 tsp salt
  • 1 large onion diced
  • 4 g fennel seeds
  • 6 green cardamoms
  • 4 cloves
  • 1 bay leaf
  • 2 curry leaves
  • 3 tsp chilli powder
  • 1 tsp ginger crushed
  • 1 tsp garlic crushed
  • 1 tbsp white vinegar
  • 1 tsp masala
  • 2 tsp sugar
  • 2 tomatoes blended
  • 7 small potatoes
  • 4 bread halves, hollowed out

Instructions
 

  • Heat oil and add cinnamon, cardamom, cloves, bay leaf and fennel. Stir.
  • Add curry leaves, chilli powder, onion, turmeric, ginger and garlic.
  • Fry for 3 minutes, then add masala and spices.
  • Add sugar and vinegar.
  • Add meat and salt. Mix until meat is coated.
  • Cover pot and cook for a few minutes.
  • Stir until meat is braised.
  • Add enough water to make sauce. Bring to a boil.
  • Cook for about 1 hour, then add potatoes. Cook for another hour.
  • When potatoes are almost done, add tomatoes.
  • Add fresh coriander leaves.
  • Dish up into half loaves.
