Ingredients
 
 

  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • ¾ tsp sea salt flakes
  • pinch of turmeric
  • 2 tbsp olive oil plus extra to drizzle
  • 1 cauliflower (about 600g) trimmed, cut into florets
  • yogurt to serve
  • mint leaves to serve

Instructions
 

  • Preheat your oven to 180/160°C (356/320°F) fan forced.
  • Combine the cumin, coriander, salt, and turmeric in a mortar, and pound with a pestle until coarsely combined.
  • Place the cauliflower in a single layer on a baking tray, sprinkle with the spice mixture and drizzle with olive oil.
  • Cook, shaking occasionally for 30 minutes or until golden and tender.
  • Drizzle the raita or yogurt with extra oil.
  • Sprinkle the cauliflower with mint leaves and serve with yogurt.
