Ingredients
Basic Rich Yeast Dough
- 5 ml active dry yeast
- 12,5 ml sugar
- 250 ml warm scalded milk
- 250 ml flour
- 50 ml butter or margarine melted
- 3 eggs beaten
- 1 kg flour
- 5 ml salt
Hot Cross Buns
- 10 ml ground cinnamon
- 60 grams mixed peel
- 60 grams seedless raisins
- 1 egg yolk
- 5 ml milk
Instructions
Basic Rich Yeast Dough
- Mix the yeast, sugar, and butter or margarine with the warm scalded milk in a large mixing bowl.
- Add the 250 ml flour to the yeast mixture and beat well.
- Cover and leave for about 45 minutes to an hour in a warm place until foamy and light.
- Add the eggs, salt and mix very well.
- Knead the dough until smooth, 4 to 5 minutes.
- Cover the dough and allow to rise in a warm place until doubled in size, about 1 hour.
Hot Cross Buns
- Use the basic rich yeast dough recipe.
- Knead the ground cinnamon, mixed peel, and seedless raisins into the risen dough.
- Shape into buns, place on a greased baking sheet and with a very sharp knife cut a deep cross into the top of every bun.
- Cover closely and set aside in a warm place until risen to double the size, about 30 minutes.
- Brush with egg yolk beaten with milk and bake in the oven at 200ºC (400ºF) for 15 to 20 minutes.

Recipe has step 1 & 4 saying add the butter/margarine twice. Confusing. If you add it in step 1, how can you fo it in step 4 again if you’ve already done it. I’m assuming something else like perhaps strong has the error of maybe only adding the milk & not the butter/marg until step 4? Am I correct in my assumption. Not sure so.safly won’t use this recipe unless I’m sure. Hope you can advise. Thsnkyou
