Fluffy Cinnamon Rolls

Ingredients
 
 

Cinnamon Roll Dough

  • ¾ cup whole milk
  • ¼ cup heavy cream
  • 2 ¼ tsp instant yeast
  • 2 tbsp honey
  • ¼ cup butter
  • cup granulated sugar
  • 2 eggs
  • ¾ tsp salt
  • 1 tsp vanilla extract
  • 4 ½ cups flour

Filling

  • 6 tbsp butter softened
  • cup brown sugar
  • cup granulated sugar
  • 2 tbsp cinnamon
  • cup heavy cream

Cream Cheese Icing

  • ½ cup cream cheese softened to room temperature
  • 2 tbsp butter softened to room temperature
  • 1 cup icing sugar
  • ¼ tsp salt
  • 1 tsp vanilla extract

Instructions
 

  • Warm the milk, heavy cream, butter, and honey together till lukewarm. This process can be done over the stove or in the microwave.
  • Pour the mixture into your mixing bowl.
  • Sprinkle the yeast and granulated sugar over the mixture and allow it to sit for 5 minutes.
  • Mix in the eggs, vanilla extract, and salt.
  • Using your dough hook hand mixer.
  • Add in the 4 cups of flour and mix for 5 minutes until the dough is smooth and tacky, but not sticky.
  • If the dough is still sticky, add the remaining ½ cup of flour.
  • Turn over the dough onto a lightly floured surface and form into a ball.
  • Place the dough in an oiled bowl and cover with a damp towel. (You can use spray and cook/cooking spray to coat a glass bowl) Also to let it rise, keep in a warm place for 30 minutes or until it has doubled in size.
  • Once your dough has doubled in size, turn over onto a lightly floured surface and roll out into a rectangle.
  • Using a knife or rubber spatula, spread the butter over the dough, leaving the border unbuttered.
  • Mix the brown sugar, granulated sugar, and cinnamon together.
  • Thoroughly sprinkle the mixture over the butter.
  • Roll the dough into the shape of a log, pinching the seams together.
  • Place the seam side down.
  • With a sharp serrated knife cut the dough into 12 equal pieces.
  • Line a 13 x 9 baking pan with baking paper and place the cinnamon rolls in the baking pan, leaving space evenly between them.
  • Cover the unbaked cinnamon rolls with a damp towel and allow to rise for 30 minutes.
  • Preheat your oven to 190ºC (375ºF).
  • Before baking the cinnamon rolls, drizzle with ⅓ cup of heavy cream over the rolls.
  • Bake them for 15 to 20 minutes, or until cinnamon rolls are lightly golden brown.
  • Allow them to cool for 5 minutes before icing them.
  • Using a hand mixer, mix the cream cheese and butter together, once combined mix the icing sugar, salt, and vanilla together until smooth.
  • Spread the cream cheese icing over the lukewarm cinnamon rolls.
  • Serve warm and enjoy!
