Ingredients
 
 

  • 1 lb squid rings cleaned, rinsed, dried
  • tbsp lemon juice
  • ¼ cup olive oil extra virgin
  • ½ tsp coarse salt
  • ½ tsp dried oregano
  • 1 clove garlic thinly sliced
  • Ina Paarman's lemon pepper to taste

Instructions
 

  • Mix together olive oil, lemon juice, salt, garlic, oregano and pepper.
  • Dip the calamari rings in the mix.
  • Heat oil in a pan and grill rings for about 2 - 3 minutes per side. Do not stir.
  • Overcooking causes it to become tough.
  • Drain on kitchen towel.
