Grilled Calamari Recipe

- 1 lb squid rings cleaned, rinsed, dried
- 1½ tbsp lemon juice
- ¼ cup olive oil extra virgin
- ½ tsp coarse salt
- ½ tsp dried oregano
- 1 clove garlic thinly sliced
- Ina Paarman's lemon pepper to taste
Instructions
- Mix together olive oil, lemon juice, salt, garlic, oregano and pepper.
- Dip the calamari rings in the mix.
- Heat oil in a pan and grill rings for about 2 - 3 minutes per side. Do not stir.
- Overcooking causes it to become tough.
- Drain on kitchen towel.
