Ingredients
  

  • 1 cup all purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp unsalted butter room temperature
  • 195 ml milk
  • 1 tsp white vinegar
  • additional butter for pan
  • maple syrup for serving

Instructions
 

  • Adding all the dry ingredients to a medium bowl, whisk until well blended.
  • Add the butter and mix with your fingertips until you no longer see any visible pieces of butter and the flour looks like coarse crumbs.
  • Adding the milk and vinegar, whisking until just combined. (Batter should be slightly thick, pouring easily but not too runny).
  • Whisk in a splash of milk if the batter looks too thick.
  • Over medium heat add the butter to the pan.
  • Pour ⅓ cup of batter into the pan spreading into a circle, don't spread too much.
  • Cooking for about 1 ½ minutes until few bubbles appear on top and the bottom is golden brown.
  • Turn the flapjacks over and cook for an additional minute.
  • If the flapjacks spring back to your touch, that's a good sign that the structure has been set and your flapjacks are fully baked.
  • Serve hot with a drizzle of maple syrup, some whipped cream, and jam.
