Easy Shortbread Recipe

Shortbread originated in Scotland. It has been attributed to Mary, Queen of Scots. Shortbread resulted from a medieval biscuit bread which was double-baked.

I have no doubt that you will enjoy this easy shortbread recipe. It has only four ingredients and is so quick to make. This is the one recipe where you simply do not substitute butter for margarine. This recipe also makes a nice bottom layer for lemon squares or a crust for tartlets. The dough is soft and pliable making it very easy to fill tartlet tins.
