Ingredients
  

  • 4 chicken breasts thawed
  • 300 g flour
  • ½ tsp salt
  • 1 tsp herbs for chicken to taste
  • 100 ml lemon juice
  • 2 eggs beaten
  • 300 g bread crumbs shopbought, fine
  • 750 ml vegetable oil for deep frying

Instructions
 

  • Cut chicken breast in half over the length
  • Use a meat tenderiser (hammer) to flatten the breast. It will become bigger as it gets flat
  • Roll in lemon juice
  • Roll in egg and add salt and herbs
  • Rest for 1 hour in fridge
  • Roll in flour, then in crumbs
  • Heat oil until very hot
  • Deep fry for approximately three minutes on one side and turn. Fry another three minutes or until golden brown
  • Drain on kitchen paper and serve hot topped with the sauce of your choice
