Ingredients
 
 

  • 2 tbsp butter or margarine
  • 2 large carrots peeled and sliced into coins
  • 1 stalk celery chopped
  • 2 ml salt
  • freshly ground black pepper
  • 3 cloves garlic minced
  • 1 tbsp flour
  • 680 grams chicken breast skinless and boneless
  • 3 sprigs fresh thyme
  • 1 bay leaf
  • 340 grams baby potatoes quartered
  • 1 onion finely chopped
  • freshly chopped parsley for garnish
  • 700 ml chicken stock

Instructions
 

  • In a large pot over medium heat, melt the butter or margarine.
  • Add the carrots, celery, and season with salt and pepper.
  • Cook, stirring often, until vegetables are tender, about 5 minutes.
  • Add the garlic and cook until fragrant, about 30 seconds. Add the flour and stir until vegetables are coated.
  • Add the chicken, thyme, bay leaf, potatoes, and stock. Season with salt and pepper.
  • Bring the mixture to a simmer and cook until chicken is no longer pink and potatoes are tender, 15 minutes.
  • Remove from heat and transfer chicken to a medium bowl.
  • Using two forks, shred the chicken into small pieces and return to pot.
  • Garnish with parsley before serving.
