Chow mein is a traditional Chinese dish with egg noodles and stir-fried vegetables. You may substitute the spaghetti with rice or rice noodles. This recipe adds chicken as the choice of meat.

Ingredients
- 1 lb boneless skinless chicken thighs
- 12 oz dry spaghetti
- 1 tbsp sesame oil
- 1 tsp fresh ginger grated
- 1 clove garlic crushed
- 1 onion sliced
- 1 carrot peeled and grated
- 1½ cups cabbage shredded
- salt and pepper to taste
- ¼ cup soy sauce
- ¼ cup chicken broth
Instructions
- Cook spaghetti in 2 liters of water with a tbsp. of salt until al dente. Drain.
- Heat oil in a pan and fry chicken and onion for about 12 minutes.
- Season with salt and pepper and move to one side in pan.
- Add garlic, ginger, carrot and cabbage and fry for 3 minutes.
- Pour soy sauce and broth over. Cook for 2 minutes.
- Mix and combine with spaghetti.
