What is a better idea than a midweek chicken casserole served over rice with vegetables on the side? This is a recipe with very few ingredients and quite simple to make.

- 8 chicken thighs
- 250 g mushrooms
- 300 ml apricot juice
- 1 packet mushroom soup powder
- salt and pepper to taste remember that the soup contains salt!
- 1 large carrot chunks
Instructions
- Set oven to 160°C/340°F.
- Place chicken in a casserole dish.
- Add apricot juice and carrot chunks.
- Sprinkle soup over chicken, pepper and, if needed, more salt.
- Bake for 45 minutes.
- Add mushrooms and bake for another 15 minutes.
