Ingredients
  

  • cups raw carrots peeled, cut in rings
  • 2 onions peeled, cut in rings
  • 500 ml water
  • ½ tsp salt to boil carrots in
  • more salt and pepper to taste
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • ¼ tsp mixed herbs
  • 2 tbsp butter

Instructions
 

  • Boil carrots in salt water until soft (approximately 50 minutes). Strain
  • Fry the onions in butter until starting to brown
  • Add salt and pepper to taste.
  • Add sugar and stir. Allow to caramelize
  • Add balsamic vinegar and herbs
  • Stir in cooked carrots
