Ingredients
For the crust
- 1 cup butter softened
- cooking spray
- ½ cup granulated sugar
- 2 ½ cup flour
- ½ tsp salt
For the Filling
- 2 blocks cream cheese softened
- ½ cup granulated sugar
- 1 large egg
- ¼ cup sour cream
- 1 tsp vanilla extract
- 1 juice of lemon
- 3 cup blueberries
For the Crumb Topping
- ½ cup butter melted
- ⅓ cup granulated sugar
- 1 cup flour
- 1 zest of lemon
Instructions
Crust
- Preheat your oven to 180ºC (350ºF), greasing a pan with cooking spray.
- In a large mixing bowl using a hand mixer beat the butter and sugar together until light and fluffy.
- Add the flour and salt, mix until well combined.
- Press into the prepared pan, and bake until lightly golden, about 20 minutes.
- Let it cool down while making your filling and crumb topping.
Filling
- In another large bowl, beat the cream cheese and sugar together until there are no lumps.
- Add the egg and beat until well combined, then beat in the sour cream, vanilla, and lemon juice.
- Fold in your blueberries.
Crumb Topping
- In a small mixing bowl, mix together melted butter, sugar, flour, and lemon zest until mixture resembles wet sand.
- Pour the filling into cooled crust, then top it with an even layer of crumb topping.
- Bake until topping is golden ad center is just set, about 40 minutes.
- Let it cool for 20 minutes and room temperature, then refrigerate until completely chilled for 2 hours.
