Banting Cheesecake Recipe

This banting cheesecake recipe contains a minimal amount of carbohydrates. It also freezes well and therefore it is also a good idea to make yourself a whole batch in tartlet cups instead of a whole cake and to freeze the portions, only defrosting one at room temperature as needed. The individual cheesecakes defrost in about 15 minutes.

  • 300 grams almond flour
  • 130 grams butter melted
  • 200 grams dark chocolate
  • 500 grams cottage cheese
  • 125 ml cream
  • 3 large eggs
  • 3 - 4 tbsp honey or xylitol
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • juice and zest of 1 lemon


  • Add melted butter and chocolate to almond flour and shape crust into a pan.
  • Mix all other ingredients together and pour into crust.
  • Bake for 15 minutes at 180°C (350ºF).
  • Reduce heat to 150°C (300ºF) and bake for a further 25 minutes.
  • Open the oven door to cool down.
  • Garnish with berries or serve ungarnished.
