  • 2 tbsp plain flour
  • 3 tsp garlic powder
  • 2 eggs
  • cup breadcrumbs
  • ¼ cup cornflake crumbs
  • 550 gram mozzarella
  • olive oil spray

Creamy avocado dipping sauce

  • 1 avocado roughly chopped
  • cup lemon juice
  • ¼ cup plain greek style yogurt
  • 2 tbsp basil pesto
  • 1 green onion roughly chopped


Make your Creamy Avocado Dipping Sauce

  • Place the avocado, juice, yogurt, pesto, and onion in a small food processor.
  • Season well with salt and pepper, and process until smooth and combined.
  • Cover, and refrigerate until required.

Making the mozzarella chips

  • Line a large tray with baking paper.
  • Place flour and garlic powder in a shallow bowl. Season with salt.
  • Whisk eggs in a separate shallow bowl, and combine breadcrumbs in a bowl.
  • Cut the mozzarella into 2cm (0.78inches) - thick slices, then into sticks. Dip cheese in flour to coat, and shake off excess.
  • Working in batches, coat sticks in egg mixture then in breadcrumbs, and place on prepared tray.
  • Freeze for 1 hour or until firm.
  • Spray mozzarella stick liberally with oil. Line the air fryer basket with baking paper, leaving 1 cm (0.39 inches) edges to allow air to circulate.
  • Cook sticks at 180°C (356°F), in batches for 4 to 4 ½ minutes or until golden and crispy.
  • Serve immediately with dipping sauce.
