Air Fryer Banana Muffins

Ingredients
 
 

  • 2 bananas ripe
  • 150 gram self-raising flour
  • 60 gram brown sugar
  • 1 egg
  • 60 ml olive oil
  • 60 ml buttermilk
  • maple syrup to brush, plus extra to serve

Instructions
 

  • Using a fork mash the bananas in a small bowl, and set aside until required.
  • Use a balloon whisk to whisk the flour, and sugar in a medium-sized bowl, and make a hole in the centre.
  • Add the egg, oil, and buttermilk. Use the whisk to break up the egg.
  • Use a wooden spoon to stir until the mixture is combined, and stir through the mashed bananas.
  • If needed preheat your air fryer to 180°C (356°F).
  • Divide half of the mixture among 9 patty cases. Remove the rack from the air fryer and carefully transfer the cases to the rack.
  • Return the rack to the air fryer, and cook for 10 minutes or until muffins are cooked through.
  • Transfer to a wire rack, and repeat with the remaining mixture to make 18 muffins.
  • Brush the tops of the muffins with maple syrup while warm, and serve with extra maple syrup, if you desire.
