Potato Parsley Soup

- 3 cups cubed potatoes peeled
- ¼ cup onion chopped
- ¼ tsp salt
- 1 can chicken broth
- 1 small bunch parsley chopped
- 2 tbsp cornflour
- 1½ - 2 cups milk
Instructions
- Combine potatoes, onion, salt, and broth in a medium size casserole. Add the parsley.
- Cook, covered for 12 - 13 minutes, or until potatoes are tender.
- Combine cornflour with a small amount of cold milk. Stir into potato mixture. Add the remaining milk.
- Cook for another 6 - 7 minutes, or until the mixture comes to a boil and is piping hot.
- Stir once or twice during the cooking.
